I've been wanting to upload this recipe for a while; one, because it's delicious, but also two, because I make it EVERY weekend. It's my happy-little reward for waking up early on a Saturday and going running (6 miles) with a group of friends come rain, shine or snowstorm (...yup... a great story for another time). Making this breakfast is a treat for me because I usually make oatmeal every morning for breakfast at work - which is not exactly the most exciting thing ever. So, come the weekend I anticipate, and take great pleasure in making, "Saturday Morning Avocado Toast." Oh, and I usually Instagram it instantly after - because you know - everyone needs to take part in the deliciousness of the dish, obviously. Nathan knows it too - every weekend without a doubt, Avocado Toast. Plus, this breakfast really good for you! A great crunch of sourdough bread, smooth avocado and runny sunny-side up eggs, it's the best. I also go crazy with playing with spices: turmeric, chipotle chili, cayenne, black pepper - you name it. I hope you enjoy this breakfast as much as I do!

There are many ways to go about this dish, but I always start with the bread. Here, we grilled the bread -because- it's SO flavorful. Put your grill on high heat and grill the sourdough bread until the grill marks are toasted in. Flip them, repeat the process, remove and set aside. If you don't want to grill the bread, you can also throw the bread on broil in the oven (or toaster) until it's toasted on one side. Then take it out and plate it toasted-side down so the softer part is facing up.

While your toasts cool a bit, turn your skillet on low-medium and coat the skillet in a thin layer of olive oil. Crack your eggs into the skillet (don't break the yolk). Add the water and let it cook for 3-5 minutes. The goal here is to gently poach the egg to a sunny-side up, so keep an eye on the eggs as they're cooking.

Meanwhile, take your toasted, or grilled bread (more toasted side down) and scoop out your avocado and spread/smash it over the surface. Add spices to taste.

When your eggs are ready, use a spatula to scoop them up and place them on your avocado-smashed toasts. Enjoy!
