I make granola about every other week. It's a pretty simple process and what I love is that I can do it while multi-tasking: cleaning, movie-watching, cooking other foods... you get the idea. I've also been dappling in different ways to make granola because I'm not a fan of store bought granola - mostly because it's expensive and usually waayy too sweet. The reason I came up with this (delicious!) Golden Coconut Granola was to add some variety in my granola stash, and, keeping with the Healthy Homemade Granola theme, this recipe is full of goodness like turmeric (why it's "golden"), coconut flakes, coconut oil, nutmeg, cinnamon, oats, pumpkin seeds and chia! I hope you enjoy this granola as much as I do.

To make this crunchy, golden granola the steps are pretty simple (which is awesome).

Preheat the oven to 350 and while it's heating up go ahead and combine your Oats, Almonds, Pumpkin seeds, Chia and Coconut Flakes into your bowl. Separately, heat a skillet, medium heat, and add your coconut oil (if hard) and melt it. When it is liquefied, pour it into your mix. Add your Maple Syrup and Agave, Nutmeg, Cinnamon and Turmeric.

Mix all that goodness together.

Cover a baking tin in tinfoil and spread your granola evenly across the baking sheet.

When your oven is set at 350, place your granola in the oven for 35 minutes.

About half-way through your 35 minutes, take your granola out of the oven and mix it around so that all the granola pieces are displaced. This will help to ensure your granola turns out crispy and crunchy! Once mixed, smooth out the sheet again and place back into the oven for the remainder of your 35 minutes.

Finally, after your granola has been in the oven for 35 minutes and you've mixed it half-way through, take your granola out of the oven and let it cool for about 10 minutes. (It'll be hard to resist eating some immediately but...) This is also to ensure crunchiness. 10 min later - done! You're good to pack up your granola to use throughout the week. I keep mine in mason jars to keep it super fresh. Enjoy!
