Pizza Stuffed Chicken Breast

I worked as the assistant director for an absolutely fantastic kids summer camp when I lived in San Diego, and have always loved working with kids. However, I was lucky that I never had to cook for them. I know so many parents who double as short order cooks and with so much of what kids want to eat being unhealthy, it can get hard as a parent to give them something they like but that is also relatively healthy. This recipe does both. It tastes just like pizza but uses turkey pepperoni and baked chicken breasts instead of dough and all that cheese... but we still get to use a little cheese :)

Start by pre-heating the oven to 375. Next, cut the chicken breasts through the middle, but make sure not to cut them into two. You want to create a little pocket for your pizza ingredients.

Layer 5 pepperonis inside each of the chicken breasts, and sprinkle on the mozzarella cheese. When each chicken breast is filled, close them on up! You can also add bell peppers, black olives, or mushrooms if you want- but this is the kid friendly version.

Bake the chicken breasts for about 20 minutes. When they are done they will be slightly browned and firm. Add a little spaghetti or pizza sauce to the plate and place one chicken breast on top of the sauce. Or, if you're hungrier, you can always make some noodles and toss them in spaghetti sauce. This makes a great side and makes the meal more filling.
