Let's face it, some nights you don't have time to do a full-fledged three course dinner (basically most nights, right?). But there's always a way to have a great dinner regardless! Welcome, One Pot Chicken and Wild Rice. Bright lemon and wild earthy herbs make this one pot chicken and wild rice dish a great combination of flavors for any weeknight dinner. It's a pretty quick, low maintenance recipe, too, which is always nice on a busy evening. Oh, and there's wine involved -- instant night enhancer.

Heat your skillet on medium and melt your butter to cover the skillet surface. Season your raw chicken with your salt and pepper, and place them in the skillet to brown. Flip before they're cooked through, and cook both sides.

Turn the heat to high and sautee your minced garlic and onion in the same skillet as previously used for your chicken.

Then, add your chicken broth, white wine and wild rice to the pot on medium heat. Bring to a boil, then a simmer.

After your skillet is simmering, add your chicken breasts back into the skillet, so everything can cook together.

Remove your chicken as soon as the broth as cooked down and add your parsley. (This is done so that your parsley doesn't wilt and stays fresh.)

Plate your One Pot Chicken and Wild Rice with a side of your choice. Add a thinly sliced lemon piece on top of your chicken breast and serve it with a glass of chilled white wine.
