While this recipe was actually founded as a part of our Rosemary Pork Roast & Lentil Salad entree, we started seeing it pop up in a lot of our day to day meals. Eventually, we were making EXCUSES just to give ourselves another reason to make this simple, healthy salad that packs some serious flavor. Christina adds it to scallops, I eat it with grilled chicken, there really is no limit for this salad's potential.
No need to overcomplicate this one: Add all the ingredients together in a good sized salad bowl and mix. Stir thoroughly to mix the olive oil evenly as well as the spices. Enjoy!
