When you're craving steak, but also looking for a lighter set of flavors, go with this recipe. Skirt Steak Citrus Salsa takes the rich flavors of steak and brightens it up with grapefruit, tangerine, cilantro and serrano. By combining these flavors you get a beautiful marriage of tang and depth. We often make this one on date nights or when we have friends over. It's always a hit!

Start by making a marinade of soy sauce, 20oz diet cola, 1/4c soy sauce, 4 tbsp olive oil, 4 tbsp black pepper, 2 tbsp thyme, 1 tbsp coriander, 3 cloves of garlic, minced & pressed Let your steaks sit in this marinade in the fridge for 30 minutes. It is meant to make the meat more tender, but you don't want the meat to deteriorate. (This marinade is also used in our Filet Mignon recipe)

Prep your citrus and serrano pepper, and let it sit in the lime juice in a bowl with your cilantro. Chill in the refrigerator.

If you have a grill, grill the skirt steak on medium-high heat for 5-6 minutes on each side. If you do not have a grill, sear your skirt steak in a skillet on high for 1-2 minutes each side. Then bake your skirt steak for 15 minutes at 400 degrees for a medium steak.

Citrus Skirt Steak

After it is cooked, take your skirt steak & cut pieces to serve. Top with your citrus salsa. This dish also goes well with our Oven Baked French Fries. recipe
