The world of tacos is a beautiful world to say the least. With some of the best tacos I have ever had coming from San Diego, I was a little shocked to see the lack of imagination in the New York taco scene. So, instead of being upset, I decided to revolutionize the taco world of NY by myself! In my opinion, tacos by default need to be simple. Yet, that doesn't mean they need to be ordinary. This recipe puts together the best of both worlds and adds an incredible flair using Pineapple Guacamole to a very simple delicacy- lobster.

Start by warming up the butter in a medium saucepan on low heat. When simmering, add in the chopped up lobster meat and cook until warm and covered in butter (like all lobster should be!)

Veggie Mix and Sausage

While the lobster cooks, dice up your pineapple into small bits. We add about 1/2 cup of pineapple to the guac at the end. Even though the guac already has pineapple mixed into it, adding fresh pineapple gives the guac a surprising texture and allows you to bite into fresh pineapple when eating the tacos. Guac

Take the lobster off the heat and keep warm in the pan. When the guacamole is ready, warm your tortillas in the oven or microwave until they are soft. Add a few dollops of guacamole to the tacos and then some lobster bits on top. Seriously, that is it. The textures and flavors are overwhelming and the combination of sweet pineapple, spicy jalapeno, creamy avacado, and succulent lobster will have you wanting to share the recipe but not share the meal.
