Pour your mint-soaked almond milk (leaves and all) into your food processor or blender along with your banana and carob chips.
Blend until it has the consistency of ice cream. You might need a little extra almond milk to get the blades going, but don’t worry, it’ll still be delicious! Serve immediately!
You can also freeze the extra left overs and enjoy them another time or use them to make a mint-coffee "frappuccino" in the morning!
