PB&J Banana Vegan Cookies

Cravings. They're somethin'. I was really itching for a PB & J and I figured what could be better than peanut butter and jelly cookies (quick oat banana style). Banana, peanut butter, oats, jelly... what more could a girl want?! They turned out to be absolutely delicious and greatly satisfying. I've made them as a breakfast and as a dessert. It's really up to you! I encourage you to try them and let me know what you think!

Preheat oven at 325 degrees.

Start with your banana, peeled, broken in half and placed in a bowl.

Add in your almond butter, quick oats, flax seeds, and chia seeds. Using a spoon mash all of your ingredients together until you have a thick cookie-dough-like consistency (it might take a little while, but you’ll get there). Add a little vanilla extract to ease the process.

Cover a baking sheet in tin foil and coat with a non-stick element (I just use olive oil). Spoon your cookie mix into little cookies leaving a crater for your jelly. Spoon a dollop of jelly into each crater.

Place your cookies in the oven for 30-35 minutes. Once they are browning on the bottom they’re ready to be taken out. Be careful, jelly tends to hold heat longer than the cookie itself, be sure they’re fully cooled before taking a bite!
