Vegan Espresso Carob Cookies

Bada bing bada boom! Espresso cookies will rock you with a jolt of espresso energy! I love making these cookies in the morning and enjoying them as an afternoon pick up. This simple recipe is an adaption of my many other quick-oat banana vegan cookies and definitely a favorite! For coffee lovers and enthusiasts these cookies are the best. Hope they do you well!

Heat your oven to 350-375 degrees.

Start with your banana, peeled, broken in half and placed in a bowl. Check out my many other banana based cookies like Peanut Butter & Jelly! But now, back to espresso cookies!

Add in your quick oats, flax seeds, espresso grounds, cocoa powder, coconut shreds, and chia seeds. Using a spoon mash all of your ingredients together until you have a thick cookie-dough-like consistency (it might take a little while, but you?ll get there). You might need to add a little vanilla extract to ease the process.

Cover a baking sheet in tin foil and coat with a non-stick element (I just use olive oil). Spoon your cookie mix into little cookies and lightly flatten them (see picture above). Optional but you can place carob chips or chocolate covered espresso beans on top of your cookie patties and place them in the oven for 30-35 minutes.

Once they are browning on the bottom they're ready to be taken out and enjoyed! Like a bolt of lightning & delicious!
