We're not big dessert people, but are all starting to see the trend here with desserts: simple, easy, and sugary :) Well, we spend so much time on our entrees that desserts really get much less attention than they should. We will work on changing that, but for now, its all we got in the tanks. These sopapillas may not be authentic or actually even be considered sopapillas without deep frying them, but they are unbelievably delicious and simple to make. I will implore one of my favorite uses of the word "relatively" and say that these are "relatively" healthy in comparison to deep fried sopapillas. Ah, yes, you can almost taste the self justification on top of the sugar and cinnamon :) Enjoy!

Lightly cover your tortilla in butter & shake cinnamon to cover the entire surface. Preheat your oven to 400 degrees.

Sopapilla

Place your tortilla in the oven at 400 degrees for 3-5 minutes. Take out & enjoy!
