Vegan Blueberry French Toast

Sweet Neptune! Christina here, this recipe was created on the occasion of Nathan’s 22nd birthday. He LOVES French toast, and growing up he used to have waffles on every birthday morning. When he let this information slip while we were dating I knew exactly what I’d do for this birthday that year. Well, I couldn't make waffles at the time so I had to improvise and do the closest thing possible. With limited resourses I modified the typical French toast recipe so that I could present him with the delicious dish. He LOVED it! And thus, we share our version of French toast with you. Hopefully you like it too!

Melt 4 tbsp of butter in a skillet on low heat, adding in the brown sugar and cinnamon. When the butter is melted, add in the slices of bread until they brown. NOTE: Sugar and butter becomes molasses and will make the bread cook much more quickly, so watch it carefully to avoid it burning.

Flip the bread once they are browned, and when both sides are cooked to your liking, remove from the heat.

In a small bowl, mash up the blueberries and add the agave nectar. Yup, you guessed it, you just made homemade blueberry syrup. Plate the french toast and drizzle on the blueberry syrup. Top with fresh blueberries and powdered sugar if you like. Enjoy!
