To be very clear - we are NOT bakers. We love cooking, mixology and wine. But baking has never quite made it into our arsenal. However, every once and a while we'll try our hand at baking something and this one didn't turn out too badly so we wanted to share it and add it to our digital cookbook (aka the website). To be honest, I really like this banana bread and have made it twice now. It's not too sweet or unhealthy so, for me, that's a win! We've been enjoying brewing up some hot coffee, pairing it with a slice (or two) of banana bread and sitting on our porch watching the sunrise with our puppy, Rex. We hope you try this recipe and enjoy it too!

Preheat your oven to 350 degrees and spray/line your pan or tin with cooking spray or coconut oil.

Banana Bread

Mix your Kodiak Mix, baking powder, cinnamon and nutmeg together in a bowl.

Banana Bread

Separately, mix your eggs, mashed bananas, honey, vanilla and melted coconut oil together.

Add dry and wet mixtures together and mix well.

Pour batter into your baking tin and bake for 50 min at 350 degrees, or until you can poke the bread with a toothpick and it comes out clean. Let cool for 10-15 min and serve topped with cinnamon and butter (optional).
