Every time we go to the store and buy pico it goes bad quickly, is way too salty, or it's too this or too that. Finally fed up, we decided to make it from scratch and boy were we pleased! Making pico from scratch allowed us to completely customize it to our pallets and it keeps way longer. You don't have to worry about any weird preservatives or high salt content. Nope. Homemade is the way to go!
Slice and dice your tomato, jalapeño, onion, garlic and cilantro & toss them in your food processor. Add the lime juice. The OJ is optional but helps to balance out the spice with a bit of sweetness.
Lightly process until you have salsa consistency. Add your salt and pepper to taste. Dish out and enjoy!
If you don't happen to have a food processor, You can finely dice all of the ingredients above and you will get the exact same result!
