Kale is a wonderful veggie. And BOY has it taken off. You can find kale at almost every restaurant or grocery store. It's awesome. For all the kale lovers out there this is one of many kale salads I love. Very light, but flavorful. It's perfect when you've already made butternut squash and have a little left over! Great for lunch, a snack, dinner, really you name it. Kale yes. Cheers!
Massage your kale in your olive oil. This will make the kale easier to digest and makes it less rough on your pallet.
If you don't have roasted butternut squash at the ready. Heat your oven to 400 degrees. Cover a baking sheet with tin foil. Peel & dice your squash, toss it in olive oil and cinnamon & salt, and make it for 35-40 minutes.
If you have your squash pre-ready, add it along with your sunflower seeds, bell pepper, ginger, and green onion.
Toss the ingredients in the bowl, add black pepper and enjoy!
