Easy Margherita Flatbread

So every week we try to make time for ourselves to catch up with each other, cook some food, drink some wine, and just unwind from the week. We call it Date Night, but mostly it consists of some Wine, Sinatra, a Martini (possibly two), and ALOT of cooking. This week, however, rather than doing a full dinner, we really just wanted to snack on appetizers and drink wine that paired stupidly well with it. Well, this is about as a classic of an appetizer as you can get!

Disclaimer: not an authentic Margherita pizza. I will make one of those in the coming weeks as an entree, but for now, I wanted to do something simple that could still taste like the real thing but be a little less kitchen and time intensive. Also, I REALLY just wanted this with wine :) We did a few other appetizers this night as well, and they are being added by Christina to the site right now so I will refrain from sharing a link, but you should see 2 or 3 more really really tasty apps right by this one in our appetizers section of the website.

Preheat your oven to 400 degrees fahrenheit and start by slicing your mozzarella into 8 thin slices.

Next, slice your tomato into 8 thin slices as well. Clean off your basil, rinse, and pat it dry with a paper towel. Brush on 2 ounces of sauce onto each flatbread and top each pizza with 4 slices of Mozzarella, 4 tomatoes (right on top of the mozzarella slices), and fresh basil.

Place the pizzas on a pizza stone or a baking sheet and bake at 400 for 12-15 minutes or until the mozzarella starts to brown. Remove from the oven and let cool for 3-5 minutes before eating. Top with fresh cracked pepper and enjoy!
