We've always loved making bruschetta, and we still do. It's such a fun appetizer, it's pretty darn cheap compared to things like Bay Scallops or Shrimp Cocktail. It's also fun cause it pairs with bright red wines or mellow to heavy whites. Really, most wines pair with bruschetta so try them all! This one is particularly close to our hearts since, if/when we open our restaurant, this will most definitely be on the menu. Enjoy :)

Directions

Dice your tomatoes, green olives, garlic, and basil into 1cm/ 1cm bits. Add salt and pepper to taste.

Slice French bread diagonally so as to give yourself a larger surface area. When you finish slicing, melt the butter and olive oil together in a medium sauce pan on medium heat. Place your bread slices in the pan, and when the bread begins to brown, flip and brown the other side. When both sides are done, remove from heat.

Bruschetta Mix

Top your bruschetta slices with your mixture, evenly distributing it to cover each bruschetta surface. Sprinkle on some fresh black pepper and you're all set. Enjoy :)
